This Parmesan-crusted baked fish is a quick and delicious dinner that you can make with any white fish. The high-temperature oven-baking creates a perfectly crispy topping of lemony, herbed panko and Parmesan cheese. It’s simple, flavorful, and ready in no time!

Ingredients

      • 1 lemon, divided

      • 1 tablespoon olive oil, divided

      • 1 clove garlic

      • ¼ cup panko breadcrumbs

      • ¼ cup grated Parmesan cheese

      • 1 ½ teaspoons Catanzaro herbs (or Italian seasoning)

      • 1 pound white fish fillets (such as cod)

      • Salt and freshly ground black pepper, to taste

      • 1 tablespoon Dijon mustard

Directions

  1. Preheat the oven
    Preheat your oven to 450°F (230°C) and line a baking sheet with foil for easy cleanup.

  2. Make the topping
    Cut the lemon in half and then into wedges. Squeeze the juice from two lemon wedges into a small bowl. Add 2 teaspoons of olive oil, then grate the garlic clove into a paste using a micro plane and stir it into the bowl. Add the panko breadcrumbs, grated Parmesan cheese, and Catanzaro herbs (or Italian seasoning) to the bowl. Mix everything together until well combined.

  3. Prepare the fish
    Drizzle the remaining 1 teaspoon of olive oil onto the prepared baking sheet. Season both sides of the fish fillets with salt and pepper. Place the fillets on the baking sheet. Brush the fish fillets with Dijon mustard, then evenly press the panko mixture onto the top of each fillet.

  4. Bake the fish
    Bake the fish in the preheated oven for about 15 minutes, or until the fish flakes easily with a fork.

  5. Serve
    Serve the fish with the remaining lemon wedges on the side for a fresh burst of citrus.
